Mixologist Marco Tello demonstrates how to mix up a Saladito Cocktail, one of Killer Shrimp's signature drinks.

What you'll need to make your own at home:
3/4 oz lime juice
3/4 oz honey syrup (combine three parts clover honey with one part hot water and stir until it pours easily)
2 oz El Silencio Mezcal
Pinch of chili salt

Directions: Combine lime juice, honey syrup and Silencio Mezcal in a mixing vessel. Fill a rocks glass and your mixing vessel with ice and shake well. Strain over fresh ice in rocks glass. Sprinkle a pinch of chili salt over the top.

Marco Tellco: Hi, we're here at Killer Shrimp, and I'm going to demonstrate a Saladito Cocktail. First things first, you need three quarter ounces of lime juice. Next, you need three quarter ounces of honey syrup. We make ours by combining clover honey with three parts clover honey, so one part hot water, and then stir until it pours easily. And finally, you have your two ounces of El Silencio Mezcal.
Then you want to grab a rocks glass and fill that with ice, and also fill your mixing vessel with ice; all the way to the top -- going to cap that off, and give it a good hard shake. [shaking mixing vessel] That's about right, and then you're going to strain over fresh ice into your rocks glass. And then you're going to take a pinch of chili salt, and sprinkle it right over the top. I make my chili salt by two parts sea salt and one part cayenne. You can also use tagine if you have that -- and there you go, a Saladito Cocktail. Cheers.
On a side note, the Saladito Cocktail is actually inspired by a childhood memory of mine. On hot days, when I was growing up, the saladitos actually technically a chili-salted smoked plum, and I would put that in the middle of either a lemon or an orange, and it would cool me off of those hot summer days. Cheers.
